Spinach and Artichoke Mashed Potatoes

5 pounds of potatoes – diced and boiled until fork inserts easily
1/3 cup onion – diced small
1 tablespoon olive oil
8 ounces cream cheese
2 tablespoons heavy cream
1 box frozen chopped spinach – thawed and drained
1 can artichoke hearts – coarse chopped
1 garlic clove – roasted
1/2 teaspoon salt
1/2 cup Parmesan cheese – grated

Creamed Onion Bake

4 tbsp butter
1 1/2 cups corn bread stuffing
2 tbsp chopped fresh parsley or 2 tsp dried parsley
3 lg onions cut in half and sliced, about 3 cups
1 can cream of mushroom soup
1/4 cup milk

Garlic Biscuits

2 c. Bisquick
2/3 cup milk (may need more)
1/2 to 1 cup cheddar cheese, shredded
 
Mix above ingredients, drop by tablespoon on greased cookie sheet.  Bake 10 minutes at 450 degrees.  Melt 1/4 cup butter, 1/2 teaspoon garlic powder and 1 teaspoon parsley.  Brush on hot biscuits.  Makes 12 biscuits.

1 unbaked pie shell
6 apples, sliced thin
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
2 tablespoons lemon juice
1 cup brown sugar
1 cup flour
4 tablespoons shortening
4 tablespoons butter

Broccoli Delight

2 onions, chopped
1/3 cup butter
2 cups cooked rice
1/2 cup grated cheddar cheese
1 cup mushroom soup
2 pounds broccoli, chopped
Sauté onions in butter and add the remaining ingredients. Pour into a two-quart greased casserole dish. Bake uncovered for 40 – 45 minutes at 350 degrees.

Cheesy Scalloped Potatoes

4 potatoes, peeled and cubed
15 ounces evaporated skim milk
1 can cream of chicken soup
1/4 cup chopped onions
1 cup shredded cheddar cheese
Boil peeled and cubed potatoes until tender. Drain. Add evaporated milk, soup and onion and cook until onions are tender. Add cheese and cook over low heat until melted.
