1/3 cup butter or margarine
2 1-lb each acorn squash
1/2 cup fine bread crumbs
1/3 cup chopped walnuts
3 tablespoons brown sugar, packed

Crunchy Pea Salad

10 oz. box frozen baby peas
1 cup cauliflower, chopped
1 cup celery, chopped
1 lb. bacon, fried crisp and crumbled
1 c. sunflower seeds
1/2 cup Ranch dressing
1/4 cup sour cream
Mix together Ranch dressing and sour cream. Pour ranch mixture over peas, cauliflower, celery, bacon, and sunflower seeds. Mix well and chill one hour before serving.

SPIKED PUNCH

1 lg. can apricot nectar
1 sm. can pineapple juice
1 qt. orange soda
1 lg. can of orange Hi-C
1/2 gal. orange sherbet
Vodka
Mix all ingredients together in large punch bowl (except ice cream.)  Then drop spoonful of ice cream on top of mixture so that it just floats on top.

Baked Cauliflower

1 large cauliflower, head
1 onion, diced
2 tablespoons parsley, chopped
1 clove garlic, minced
16 ounces stewed tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated parmesan cheese, optional
Break cauliflower into small florets. Combine everything in a casserole dish. Cover and bake at 350F for about 40 min. or until tender.

12 large plum tomatoes

Sweet Potato Salad

1 pound sweet potatoes, baked
1/2 cup cooked green peas, cold
1/2 cup crushed unsweetened pineapple
3 tablespoons chopped fresh parsley
1/3 cup favorite dressing
8 lettuce leaves, optional
 
Peel and slice sweet potatoes and place in a small bowl. Add remaining ingredients; toss lightly. If desired, serve on lettuce leaves.

3 tablespoons margarine
1/4 cup orange juice
1/4 cup honey
1 teaspoon orange rind
1/2 teaspoon salt
1/2 teaspoon pepper

Citrus Berry Mimosas

6 ounces frozen orange juice concentrate
6 ounces frozen pineapple juice concentrate
2 cups raspberry juice
1 12-ounce can lemon-lime soda, chilled
