3 pounds pork loin roast
1 teaspoon salt
Pepper to taste
3 garlic cloves, sliced
16 ounces dried pinto beans, soaked several hours in water

Tomato Salad

5 medium tomatoes, chopped
1 tablespoon sugar
1 teaspoon salt
1 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground pepper
1/2 cup vegetable oil
6 tablespoons vinegar
1 tablespoon Worcestershire sauce
1 large onion, diced

Cucumber Soup

This soup is excellent served cold.
 
1 large cucumber, peeled
2 cups chicken broth
1 1/2 cups milk
1 tablespoon lemon juice
1/2 teaspoon curry powder
salt
pepper
chives
Dice cucumber. Put all ingredients in blender. Blend till smooth. Store in refrigerator several hours or overnight. Garnish each serving with cucumber slice and chopped chive. Serve with croutons and carrot sticks.

Chicken Pasta Salad

5 ounces spiral macaroni
1 1/2 cups snow peas
1/3 cup mayonnaise
1/4 cup French salad dressing
2 cups cooked diced chicken
 
Cook macaroni, add peas 2 minutes before done. Mix mayo and dressing. Add macaroni and chicken.

1/2 teaspoon Worcestershire sauce
1/8 teaspoon paprika
1/8 teaspoon garlic powder

Baked Cabbage

1 cabbage head, quartered
1 onion, chopped
Fresh dill
1/3 cup vegetable broth
1 apple, peel, chop
1/3 cup white wine, optional
3 tablespoons chopped fresh parsley
1/4 cup shredded non-fat mozzarella
Place cabbage in casserole. Top with onion, apples, cheese and parsley. Pour broth in bottom. Cover with foil and bake at 350F until cabbage is tender.

Mashed Potato Salad

6 large potatoes
6 eggs, boiled and diced
2 teaspoons mustard
1 medium onion, chopped
1/2 cup diced sweet pickles
Salt to taste
1/2 cup mayonnaise or more
Peel and slice potatoes. Boil until done; drain excess water. Mash potatoes with masher. Mix all ingredients and potatoes together. Serve cold or hot.

12 each frankfurters, deli style
1/2 cup sweet pickle relish
1 tablespoon prepared mustard
3/4 pound medium sharp cheddar cheese
12 bacon slices

Baked Winter Squash

1 medium butternut squash
1 tablespoon applesauce
1 tablespoon maple syrup
1 tablespoon molasses
2 tablespoons orange juice
1/8 teaspoon ground ginger
1 teaspoon ground cinnamon

2 pounds potatoes, cooked
2 hard-boiled eggs
1 green pepper, diced
1 small onion, chopped
1/2 cup salad oil
1/3 cup wine vinegar
1/4 teaspoon oregano
1/2 teaspoon dill weed

5 slices whole wheat bread
1/4 cup melted butter
1 tablespoon granulated sugar

Hawaiian Ham Salad

2 cups cubed cooked smoked ham
8 ounces pineapple chunks
2 celery ribs, sliced
1/2 cup black olive, halved
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 cup peanuts
