Who is behind My Online Meals? Kathy McHenry is a healthy eating coach who has made it her goal to help busy families get nutritious meals on the table every night of the week. Kathy believes that by organizing your menus ahead of time and shopping from a list, you can save time and money while providing your family with good, healthy food. She proved this philosophy while helping her sister keep food costs down, create freezer meals and morph one meal into another as she raised a family of three.
There were three major events that spurred Kathy to create My Online Meals. First, was working with her sister who didn’t get the family cooking gene. Kathy and her sisters grew up watching both their parents in the kitchen. Mom cooked everyday meals, while dad loved cooking and entertaining for a gathering. Kathy was inspired by both, but her sister just wasn’t interested in cooking. Kathy helped her sister get organized by planning weekly meals, providing her with recipes and a shopping list. Hence the idea of My Online Meals was born.
Her second inspiration was the realization that this is the first generation whose life expectancy is less than that of their parents’. Much of this is due to our culture of prepared foods, fast food and restaurant meals. “Most of the recipes on My Online Meals lean toward the lighter side, but even the most fattening recipe we deliver will not compare to the fat and calories of a typical restaurant meal,” says McHenry. Busy families have even greater challenges as they jump from dance lessons to soccer practice to piano recitals – many of them gone most nights of the week. Lastly, Kathy read an article that described how recipes are being written differently than they were 30 years ago – essentially saying that recipes are being “dumbed down.” Years ago we were taught to cook by our mothers and grandmothers; but since more and more women joined the work force the art of cooking is not being passed down. With less time to cook, more prepared food available and a loss in the art of cooking, families are succumbing to quick meals full of empty calories.
