Black Bean & Rice Salad

2 cups cooked rice, cooled to room temperature

1 cup cooked black beans

1 cup chopped fresh tomato

2 ounces cheddar cheese, shredded

1 tablespoon snipped fresh parsley

1/4 cup Italian dressing

1 tablespoon fresh lime juice

Lettuce leaves for serving

 

Combine rice, beans, tomato, cheese, and parsley in large bowl.  Pour dressing and lime juice over rice mixture and toss.  Serve on lettuce leaves.
