Blue Cheese Potato Salad

5 pounds small red potatoes, cooked and quartered

Salt and vinegar

2 bunches green onions, washed and chopped

5 stalks celery, chopped

1/2 cup fresh dill, chopped

1 cup mayonnaise

1 cup sour cream

2 teaspoons lemon juice

Salt and pepper to taste

1/2 cup crumbled blue cheese, or more to taste

 

Mix together green onions, celery, dill, mayonnaise, sour cream, lemon juice, and salt and pepper. Add blue cheese and mix well, let mixture sit overnight. Then, toss potatoes with a little vinegar and salt. Add blue cheese mixture to the potatoes and mix well.
