These little hens are delicious and extremely easy to prepare. I served with roasted sweet potatoes and extra citrus glaze on the side. This serves two.
Cornish Game Hens w/ Citrus Glaze
2 hens split in half
2 oranges
1 grapefruit
2 lemons
1/4 cup vegetable oil
1/4 cup honey
Heat oven to 350 degrees F. Line a baking sheet with foil and spray with PAM. Lay the hens cut side down and pat dry with paper towels.
Juice all fruit into a bowl, add vegetable oil and honey. Whisk together to combine. Set half aside to heat and serve beside the hens.
Brush the glaze on the hens and bake for 40 minutes. Brush with glaze and cook an additional 40 minutes.
