CSA – It’s getting good!

I think I’m in week 4 of my CRA and find that I’m receiving some really great vegetables. The greens still come, but they are looking more familiar…romaine lettuce. I’m getting a lot of yellow squash and zucchini. One of my favorite things to do with these squash is slice them into half inch discs, bread them and fry ‘em up like chicken, but I’ve resisted so far because I’m trying to keep it light.

Ten minutes after I stood in front of my squash wondering what I’m going to do with it all, I turned on the Food Network and watched Pat Neely grill practically the same vegetables to make his Vegetable Hero. It looked delicious and I headed straight to the kitchen. I highly recommend this as it was delicious-even on a toasted hamburger bun.

The next evening I added bite sized pieces of the squash and chopped pecans to my Chicken Scampi. Again, delicious.

In addition to the squash, I received giant radishes which I believed would be hollow but to my surprise were wonderful. A huge crispy radish goes great with a sandwich at lunch time. Chinese cabbage, cucumbers, a nice bunch of beets, some beautiful onions, and a favorite of mine – kohlrabi rounded out my recent pickup.

One unexpected bonus of joining the CRA is that my granddaughter and I get to beautiful downtown historic Fredericksburg every week to pick up our bounty. We take extra time to wander around, learn some history, and then enjoy a nice dinner downtown. Making memories.
