Give me a morning pick-me-up!

I’m a Diet Pepsi gal who’s never been a coffee lover. But I recently tried one of those Starbucks Frappuccino’s and loved it. So, as with everything, I hunted for a recipe. I found a couple but nothing was to my liking, usually too sweet. So I took a little from each and came up with what works for me. This recipe makes 6 cups and can be stored in the refrigerator for up to three days…never lasts that long here.

Frappuccino

1 empty plastic milk jug, 1/2 gallon size

5 cups 2% milk

3/4 cup good ground coffee

1 1/2 cups cold water

2 tablespoons dry pectin

1/8 cup sugar

Brew your coffee, you should end up with about a cup of very strong coffee. While that is brewing pour your milk into the empty jug and set aside. Put the sugar in a glass bowl or measuring cup; pour hot coffee over sugar and mix with a small whisk or fork until dissolved. Stir in pectin until dissolved.

Pour a little milk at a time into the hot coffee to temper the mix. This cools the coffee a bit before you add it to the milk. Pour mixture into the milk; cover and shake to combine. Refrigerate for several hours before use. It may separate a bit and will need to be shaken before each use.
