Hearty Beef Stew

Once the cold weather comes on I start thinking about all the hearty meals I had as a child. Last night I decided to make a big pot of beef stew. This pot will last a couple of days so I get a little break from cooking.

If you have frozen vegetable on hand you can get this delicious stew put together in a very short time and then let it simmer until you’re ready to serve.

The fresh baked buns are from frozen as well. This stew will bring back childhood memories. And with all recipes, this is just a start, you can change it up to your own taste.

Hearty Beef Stew

1 lb stew meat

4 cups cold water

2 tblsp olive oil

1/2 cup chopped onion

1/2 cup chopped carrot

1/2 cup flour

1 bay leaf

1 can beef broth

1 cup fresh or frozen corn

1 cup fresh or frozen peas

1 cup fresh or frozen green beans

3 potatoes pealed and cubed in to 1 inch pieces

salt and pepper

Heat oil in a large pot, add the onion and carrots; season with salt and pepper;cook until tender. Add the stew meat to the pot; sprinkle flour over meat. Stir together so everything is coated in flour.

Add water, beef stock, potatoes, and bay leaf. Simmer for 45 minutes; add the remaining vegetables and simmer until ready to serve. Salt and pepper to taste.
