On Saturday was my littlest man’s first birthday party…can I take a side note and just say WHERE HAVE MY SWEET BABY GONE! *sniff sniff* Ahh..
I always do the same old cupcakes and am, frankly, tired of either eating them or avoiding them, so this year I madeĀ a baked yummp for the adults at the party. I found this recipe buried in my cookbooks on their shelf (I know you have a million of those, along with the pile of recipes you’ve ripped from magazines) and thought it would be a great addition.
They were a BIG hit. I hope you enjoy them as much as we did.
Lemon Mascarpone Blondies

- 1/2 c. butter, melted
- 1 c. tightly packed brown sugar
- 1 egg, lightly beaten
- 1/4 t. vanilla extract
- 8 oz. mascarpone cheese
- 2 T. lemon juice (about 1/2 lemon)
- 1 1/2 t. lemon zest (about one whole lemon)
- 1/2 t. baking powder
- 1/8 t. baking soda
- Pinch of salt
- 1 c. all-purpose flour
Preheat oven to 350 degrees. Lightly butter and flour an 8×8 pan.
- Whisk together melted butter and sugar in a bowl.
- Add the egg and vanilla extract and whisk.
- Add the lemon juice, zest, mascarpone cheese and mix thoroughly.
- Add flour, baking soda, baking powder and salt. Mix together until completely incorporated.
- Pour into pan and spread evenly.
- Bake 25-30 minutes or until toothpick comes out of the center clean.
- Allow to cool completely on a wire rack.
Makes 9 blondies.
Tip: Microwave the lemon for 10 seconds before cutting it in half to get more juice out of it.
Take it up a notch:
Top with a raspberry or other fruit sauce.
Serve with fresh berries and whipped topping on top of each bar.
Add chocolate shavings to the suggestion above.
Use your imagination! This is a “cream cheese” and lemon based bar so there are endless possibilities of complimentary flavor choices.
