Mirepoix ā is the French name for a combination of onions, carrots, and celery. But this is not the only combination of vegetables referred to as aromatics. These vegetable combinations are intended to provide a background flavor for a finished dish.

To create the basic mirepoix you will need 2 parts onion, 1 part celery, and 1 part carrot; brown the onions in a small amount of fat, then add the carrots and brown. Add the celery and cook until the vegetables turn a deep rich brown.
This same combination, or any other combination, can just as easily be tossed into a pot of water and simmered.
For Asian aromatics, try 2 parts ginger, 2 parts garlic, and 1 part green onion. For a Cajun trio use 2 parts onion, 1 part green bell pepper, and 1 part celery.
