Swiss Asparagus AuGratin

1/2 cup water
1 1/2 pounds asparagus spears, trimmed
2 ounces finely shredded natural Swiss cheese
1/4 cup dry bread crumbs
2 tablespoons Kraft touch of butter spread, melted
1/2 teaspoon dry mustard
1/8 teaspoon pepper
 
Heat oven to 400 degrees.
Bring 1/2 cup water to boil in 10-inch skillet; add asparagus. Cook 2 minutes; drain. (Asparagus will still be crisp).

Fruit Salsa

2 cups diced fruit (papaya, pineapple and cantaloupe)
1/2 c finely chopped green or white onion
3 T. chopped fresh cilantro
1 T. orange juice
1 T. fresh lime juice
1/2 – 1 chopped jalapeno
1/2tsp. salt, optional
 
Mix together and chill.  Serve with lime flavored tortilla chips.

Club Burrito

1 flour tortilla
1 deli-style turkey slice
1 deli-style ham slice
1 Swiss cheese slice
shredded lettuce
sprouts
 
Layer the tortilla, cheese, ham and turkey, with the tortilla on the outside. Place some lettuce and sprouts in the middle. Add any other veggies, if desired. Roll, and secure with a toothpick.

2 cups French bread, in half inch cubes
2 1/2 cups onion, thinly sliced
1 1/2 cups cucumber, thinly sliced, peeled
1/2 cup capers
1/2 cup parsley, flat-leafed, finely chopped
5 garlic cloves, minced
1 cup olive oil
1/3 cup red wine or balsamic vinegar

Zucchini Bake

1 pound shredded zucchini (3-4 cups)
3 eggs
1 small onion, grated
1/3 cup buttermilk
2 tablespoons canola oil
1/2 cup grated parmesan cheese
1 cup Bisquick or similar biscuit mix
 
Preheat the oven to 350 degrees.
Spray a 9-inch pan or 11-by-7-inch baking dish with a nonstick vegetable coating; set aside.

Mashed Potato Salad

6 large potatoes
6 eggs, boiled and diced
2 teaspoons mustard
1 medium onion, chopped
1/2 cup diced sweet pickles
salt to taste
1/2 cup mayonnaise, or more
Peel and slice potatoes. Boil until done; drain excess water. Mash potatoes with masher. Mix all ingredients and potatoes together.
Serve cold or hot.

Sweet Potato Salad

1 pound sweet potatoes, baked
1/2 cup cooked green peas, cold
1/2 cup crushed unsweetened pineapple
3 tablespoons chopped fresh parsley
1/3 cup favorite dressing
8 lettuce leaves (optional)
Peel and slice sweet potatoes and place in a small bowl. Add remaining ingredients; toss lightly. If desired, serve on lettuce leaves.

Tomato Salad

5 medium tomatoes, chopped
1 tablespoon sugar
1 teaspoon salt
1 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground pepper
1/2 cup vegetable oil
6 tablespoons vinegar
1 tablespoon Worcestershire sauce
1 large onion, diced
Blend all ingredients together and chill for 1 hour before serving. Serve on lettuce leaves.

Cranberry Chicken

4-6 boneless, skinless chicken breasts (cut into 2-3 pieces per breast or leave whole)
1/2 chopped onion
3 T butter or margarine
1 pkg onion soup mix
1 small bottle (or 1/2 a large bottle) of Russian dressing
1 can “whole” cranberry sauce

Baked French Toast

1 cup brown sugar
1/2 cup butter
1 tbsp. corn syrup
Heat together and pour into a 9×13 inch pan. Slice French bread 1/2 inch thick and lay slices on top of the brown sugar mixture. Beat together:
