Tomato Salad

5 medium tomatoes, chopped
1 tablespoon sugar
1 teaspoon salt
1 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground pepper
1/2 cup vegetable oil
6 tablespoons vinegar
1 tablespoon Worcestershire sauce
1 large onion, diced
Blend all ingredients together and chill for 1 hour before serving. Serve on lettuce leaves.

Tomato and Onion Salad

6 medium tomatoes, wedged
4 scallions, chopped
1 small sweet onion, sliced
2 tablespoons chopped cilantro
1 teaspoon mint
1/4 cup olive oil
3 tablespoons lemon juice
1 garlic clove, crushed
salt and pepper
pita wedges
Combine tomatoes, scallions, onion, cilantro and mint. Whisk together oil, lemon juice, garlic, salt and pepper.

Coffee Cooler

3 1/2 cups strong coffee
1/4 cup brown sugar
1 cup vanilla ice cream
ice to fill blender
Chocolate syrup, optional
In blender, combine coffee, brown sugar, ice cream and ice. Process to desired consistency and enjoy. Add the chocolate syrup for a mocha coffee.
